Its character and intense aroma bring out the taste of oily fish like salmon or tuna, as well as lighter white fish. It also goes perfectly with carpaccio of meat or fish, poached egg, pasta, or young vegetables, baked or griddled; a prime ingredient in all types of hot or cold vegetable soups, and vinaigrettes.
